Well, after thinking about it for a few months, we decided to give Sun Basket a try. So with our coupon code in hand, I scheduled a box with 3 fabulous (practically Always Hungry Compliant) meals to try that would help break up my weekly menu, which is a great creative help.
The great thing was the trip to the grocery store the week of was so insanely easy when all I was shopping for was 3 evening meals and breakfast, since lunch usually consists of left overs.
Meal 1: Grilled Salmon & Summer Vegetables with Chimichurri Sauce
I’m not a huge salmon fan, much to Travis’ disappointment. If cooked wrong it gets fishy, this one was surprisingly easy and very good. Simply flavored meat & veggies with a fresh chimichurri sauce to really elevate the dish
Overall: Will attempt again in the future & recommend! Plus I finally got to try fennel which I’ve never had fresh and it was a pleasant addition!
Meal 2: Shrimp Creole
Yum! It’s been a while since we’ve had shrimp and seafood at home. This one was yum, easy and full of veggies and flavor!
Taste: YUM YUM
Overall: Very good! The plus side is everything comes with just the right amount of ingredients so I don’t waste anything. Travis was impressed that the shrimp was cleaned and fresh. I did opt to mince the bell pepper because me picky husband doesn’t like them and we didn’t include red pepper either which makes it fake creole but still yummy!
Meal 3: Chili Verde Chicken with jicama salad
This one was a bit more adventurous than the other two, if I’m completely honest. But I had jicama before and knew I liked it and anything with peppers gets me smiling!
Difficulty: Easy, although probably easier without the added jalapeño
Overall: It was easy to make but I think a crock pot version of this meal would be a 1000x more amazing. It wasn’t nearly as rich or have the depth in flavor I was looking for. It’s the only meal I added extra pepper too once served on the table.
Final Thoughts: Overall, I’d totally love more Sun Basket Meals for busy weeks. I’ve become much more disciplined in meal planning and it’s helped tremendously with the age old, “What’s for dinner?” question. Mostly from myself because hubs will eat what I put in front of him…so long as its not cereal, pasta, or potatoes. (Womp)
We enjoyed our Sun Basket but are going to be taking a break, we just got 2 boxes of meat in the mail during the week I made these meals. Enough meat that I dare say, we are good for August & September! One is our regular box from Massa Natural Meats, locally raised protein here in California and the other was a great box full of yummy treats from Omaha Steaks. (Thanks Gma & Gpa!)
