Lemon & Coconut Balls- Recipe

So, I was trying to come up with a fun unique thing to take to our Company picnic a dew weeks ago and I stumbled across this lemon coconut ball recipe in the Pinterest-sphere, I made a few changes and made it my own! These are raw, vegan, grain free, gluten free and refined sugar free, perfect for a sweet and topical treat without too many calories! And only made of yummy stuff! This recipe yields about 15 balls, perfect for just about everything and especially during the summer months!

What you will need:

2 cups shredded coconut

1/2 cup almonds

4 Tablespoons honey

Juice from one lemon and a little bit of zest

Add ingredients to a food processor and blend until well mixed.

Form into balls and roll in remaining coconut.

Place on a lined pan and chill in the refrigerator.

Don’t eat them all at once! Perfect for after a summer run, yoga or whenever you need something sweet without all the calories and refined sugars!

    1. I know, it is super easy and if you had a food processor it is way easier than using the blender that I have! Add 2 Tbsp of coconut oil for more coconut flavor. I like the sour lemon flavor
